Empresas&amp;Eventos le pareci\u00f3 oportuno hablar con uno de los chefs m\u00e1s renombrados de Montevideo. Maximiliano Matsumoto chef del restaurante 1921 del Hotel Sofitel. Matsumoto nos cont\u00f3 su historia y su visi\u00f3n de la cocina actual.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Maxi c\u00f3mo empezaste en el mundo gastron\u00f3mico?<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Yo soy nacido en Argentina, de Burzaco en la provincia de Buenos Aires. Hijo de floricultores japonenes, pap\u00e1 hijo de japoneses y mi mam\u00e1 nacida en Jap\u00f3n. Mi pasi\u00f3n por la cocina fue a trav\u00e9s de que yo ayudaba a mi madre a cocinar en casa.&nbsp; Mi parte gourmet naci\u00f3 por mi padre que cuando salvaba un ex\u00e1men me llevaba a comer afuera a restaurantes muy bonitos. Mi padre trabajaba en una constructora que hizo el hotel Cesar Park, hoy hotel Sofitel Buenos Aires, y cuando lo iba a buscar pasaba por la cocina y ve\u00eda a los cocineros trabajar all\u00ed en el hotel. Cuando vi que se pod\u00eda estudiar cocina me dije es lo que quiero y cuando termin\u00e9 secundario me tir\u00e9 a estudiar.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Y c\u00f3mo empezaste?<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Fui a estudiar al Instituto argentino de gastronom\u00eda con 19 a\u00f1os y trabajaba de cadete en otro lado para pagarlo. Luego&nbsp; logr\u00e9 una pasant\u00eda en un hotel donde el chef era Germ\u00e1n Martitegui y el hotel justo era el hotel que hab\u00eda constru\u00eddo mi padre para mi asombro. Ah\u00ed empec\u00e9 y trabaj\u00e9 all\u00ed siendo mano derecha de Germ\u00e1n y me fui luego a su restaurante Tegui. Trabaj\u00e9 luego haciendo pr\u00e1cticas en Londres con Tom Aiken un chef que tiene 2 estrellas, en Luxemburgo, en Madrid, en Brasil y en Chile.Despu\u00e9s pas\u00e9 por el Hotel Faena en Buenos Aires en la parte de eventos y estuve en un restaurante asi\u00e1tico Tora entre otros.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>C\u00f3mo lleg\u00e1s a Uruguay?<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Con Uruguay&nbsp; yo tengo una historia desde cuando ten\u00eda 10 a\u00f1os. Un verano mi padre quiso salir de vacaciones fuera de Argentina y vinimos ac\u00e1 en el buque de Colonia. Hicimos Colonia, Atl\u00e1ntida, Piri\u00e1polis, Punta del Este y llegamos al Chuy. y me encant\u00f3 el pa\u00eds. En el 2016 me invitaron a cocinar en Punta del Este y pens\u00e9 que lindo lugar para trabajar y vivir. Ya en el 2020 me llaman de Sofitel Montevideo para venir, vine me encant\u00f3 el hotel y conoc\u00ed Montevideo y me gust\u00f3. Me ofrecieron quedarme y orden\u00e9 todo en Buenos Aires y empec\u00e9 en marzo. Ese famoso marzo en que me agarr\u00f3 la Pandemia y me volv\u00ed a casa. Casi a los 2 a\u00f1os ya con mi mujer y mi hijo volv\u00ed a Montevideo. Y agarr\u00e9 el restaurante 1921 y la parte de eventos del hotel.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Para donde ves que va la comida rioplatense?<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Y siempre la carne y cosas de parrilla obviamente. Me sorprende el poco pescado que se consume en Uruguay teniendo tan buena materia prima. Igual veo que ha aumentado el consumo de mariscos y pesca. A mi me gusta trabajar los productos locales y hacer la carne con diferentes cocciones, adem\u00e1s me gustan las pastas no convencionales. Me gusta tener una carta equilibrada, con vegetales \u00f3rg\u00e1nicos siempre acompa\u00f1ando.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Qu\u00e9 platos te encanta cocinar?<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Me gusta una pizza bien hecha o una milanesa bien hecha, una rica parrilla. En un restaurante me gusta que haya vegetales combinados crudos con buenas salsas y me cuesta encontrarlos. Me gusta obviamente la comida asi\u00e1tica. El sushi me gusta de pescado blanco pero no me encanta hacerlo porque en mi infancia siempre com\u00ed eso y es com\u00fan para mi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Que objetivos ten\u00e9s en la cocina, aspir\u00e1s a una estrella Michelin?<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A ver, es lindo que haya una premiaci\u00f3n pero mi meta es que la gente se vaya contenta y tenga una linda experiencia y que te vaya luego a recomendar. Las estrellas te elevan pero primero hay que pensar en el comensal.
